Grape Varieties :  Grenache 53%   Syrah 30%
Cinsault 7%  Carignan 10%
 
Age of the Vineyards :  50 years average age
 
Geographic Situation :  One part in the north of Orange, composed of sandy and stony soils, on calcareous grit ; one part in the south of Orange, where the soils are on alluvial terraces, composed of rounded pebbles mixed with clayey limestone
 
Methods of Cultivation :  Principles of the “agriculture raisonnée”, a philosophy of production to guarantee :
- a first-quality product
- a completely safe product
- a better respect of our environment

The utilization of traditional techniques; ploughing, hand harvesting and sorting by each grape-picker.
 
Methods of Vinification :  Total de-stemming of the grapes.
Maceration for a period of 20 days.
One part is aged in “barriques”, for 6 to 8 months.
 
Wine & Food :  Serve at 16° to 18°
Appearance : deep red colour
Nose : bouquet of red fruits with a woody hint
Palate : powerful but well-balanced, with harmonious and very supple tannins. Aromas of vanilla, liquorice and roasted almonds. It is a supple wine, well-constituted, with a good persistence in the mouth.
This wine is particularly recommended with all red meats and accompanies Provencal dishes extremely well.
